The Hornbill story

A restaurant shaped around its surroundings.

Hornbill sits at one of the estate’s most dramatic vantage points, looking across the valley towards the Western Ghats. The landscape is not a backdrop here. It is part of the meal.

The restaurant was built with reusable and enduring materials such as wood, iron and stone, chosen to sit naturally within the mountainside rather than compete with it.

Its name is a tribute to the remarkable birdlife that shares Blackberry Hills. Birds move through the estate throughout the day, and Hornbill was conceived as a dining space that remains connected to that living landscape.

The way we cook

Slow, fresh and deliberately unhurried.

Cooking at Hornbill follows a simpler rhythm. Food is prepared fresh, with the patience of home-style cooking rather than the pace of a conventional restaurant kitchen.

Think of it as grandma-style cooking in the hills: dishes given the time they need, served without rushing the table, and meant to be enjoyed alongside conversation, birdsong and the changing light over the valley.

That is why dining here is intentionally unhurried. Hornbill is less about moving quickly through courses and more about settling into the experience.

After dark

Dinner beneath the stars.

For a more private evening, Hornbill can arrange a romantic candlelight dinner in the cabana under the night sky.

The setting is intimate, quiet and deliberately removed from the conventional restaurant experience, with the darkness of the hills and the lights of the table creating the atmosphere.
